    Bacillus cereus芽胞の耐熱性に及ぼす高圧あるいはアルカリ性電解水(AlEW)の併用処理の効果を検証した。100MPa程度でも,50℃で60分ほどの圧力処理のみでもおよそ2Logの不活性化効果があったが,AlEWの併用しても効果の増強は認められなかった。高圧処理時間,温度および圧力値の場合でも,AlEWを併用したほうが概ね高い耐熱性を維持する傾向であったことから,AlEWはB. cereus芽胞において,圧力ストレスに対して保護的な効果を持つと考えられた。抗生物質(クロラムフェニコール,リファンピシン,ペニシリンG)を用い,これらに対する感受性の変化に基づいて損傷特徴の把握を試みた結果,高圧単独とAlEW併用処理との間には,損傷の特徴に差があることは明らかであったが,耐熱性と損傷程度の間に明確な関係を見出すことはできなかった。(著者抄録)

    食品の保存性向上や高度な安全性を確保するためには,様々な技術を適切に組み合わせる"ハードルテクノロジー"を円滑に機能させることが重要である。ほとんどの場合において,物理的あるいは化学的な技術を適切に併用し,低い投入エネルギーの組み合わせによって許容されるレベルの微生物学的な安全性を確保することを目的としたものである。食品の保存を検討する場合,一部のグラム陽性細菌が形成する芽胞は,ストレスに対して高い耐久性を示すため,非常に厄介な存在であるが,ハードルの適切な設定によって制御は可能となる。本講座では,代表的な非加熱処理の一つである静水圧(高圧)処理について,100MPa以下の圧力レベルでの実施を目標として,いくつかの補助剤との併用による芽胞の弱体化処理と食品保存に対する効果について,これまでに筆者らが実験的に検証した内容について論述する。(著者抄録)
